Seafood Lunch


Bacon wrapped scallops.
Awesome.
Crazy good.
Eye-rollingly fantastic.
(I know that's not a real word)
The Best Bacon -Wrapped Scallops Ever:
3-4 (appetizer portion) or 6-7 (entree portion) New Bedford, MA Scallops per person, fresh from your fish monger (never on a Monday though)
touch of pure maple syrup
*Let the scallops marinate in the dressing for an hour or so.
*Pre-cook the bacon on a sheet pan until half cooked (about six minutes) in a 375 degree oven.
*Pan sear the scallops.
*Wrap each scallop in bacon and secure with large toothpicks or on skewers.
*Grill (or broil) on medium heat basting lightly with maple syrup.
After the marinating this whole production really only takes about 20 minutes if you've pre-heated everything, it's worth the effort.
This recipe will make people swoon...seriously, I promise.
